The sugar in honey has been predigested by the bees and reduced to fructose and dextrose (simple sugars), making it easy for us to digest. In addition, raw honey contains modest amounts of many vitamins, minerals and enzymes. Its moisture absorbing properties make it a good antibacterial agent, as bacteria needs moisture to thrive. Harmful germs for instance, die within 48 hours when introduced into pure honey, which is why fresh honey has traditionally been used to dress wounds.
Fruit spreads are a mixture of fruit and fruit juice and generally contain less sugar than jam so, are lower in calories. They need to be stored in the fridge so that they do not spoil. Yeast extracts also make a wonderful spread and are naturally rich in vit-B. Nut butters are a wonderful source of EFA and minerals. Use them on wholemeal bread and toast, or eat with oatcakes for a tasty snack.

RECIPE: NUT BUTTER SALAD WRAPS

Serves 4
4 large flour tortilla wraps
½ cp mixed or single nut butter
¼ cup egg-free mayonnaise
Mixed salad
1 cup bean sprouts
Salt and pepper to taste

How to:
  1. Spread the nut butter and mayonnaise over each tortilla
  2. Divide the salad over each and top with sprouts.
  3. Fold tortillas enclosing mixture to make a pocket.
