RECIPE: AMARETTI STUFFED PLUMS
Serves 2
100g ground almond
3-4 drops almond extract or essence
4 organic, free range egg yolks
75 g xylitol
4 ripe plums, halved and destoned
1 tbsp faked almonds
How to:
- Preheat oven to 180c and line baking tray with paper. Mix together the ground almonds, almond essence, egg yolk and xylitol to form a thick paste.
- Shape into balls and press into the middle of the plums, then sprinkle with flaked almonds.
- Place on the baking tray and bake for around 12 minutes until the top starts to turn golden and the fruit is soft when squeezed. Don’t overcook it or the plums will collapse.
